New Yorker built an empire of vegan eateries
Pamela Elizabeth was pursuing a career in theatre and opera when she decided to open her first vegan restaurant. One passion overtook another, and Elizabeth soon switched paths to become a restaurateur.
She opened Blossom Restaurant in 2005, one of the first gourmet vegan eateries in New York. Elizabeth founded a vegan quick-serve chain, Blossom Du Jour, in 2010, and there are now four locations in the city. For a comfort food option, Elizabeth established Urban Vegan Kitchen in 2016. Her most recent venture, vegan chocolate shop Cocoa V, opened on Valentine’s Day 2017.
Elizabeth said she invested between $8,000 and $10,000 in her first restaurant in 2005 and its growth allowed her to fund the others without investors.
