VEGAN MAC N CHEESE FOR YOUR THANKSGIVING TABLE

The traditional Thanksgiving menu is delicious, but quite challenging for vegetarians and especially vegans. Since such a small percentage of the population are practicing vegans, most hosts don’t consider their diet needs when planning a menu. What to do? You don’t have to skip the great feast, nor celebrate on an empty stomach because you can easily whip up something quick and delicious inspired from the carefully crafted menu from Urban Vegan Kitchen.

Most people associate vegan food with boring food, often considered unseasoned, tasteless and unadventurous. Didn’t your mom teach you not to say “I don’t like it” until you taste it? Vegan food like any other type of food can be delicious if cooked right. That was the idea behind Urban Vegan Kitchen, a restaurant in the heart of New York City’s West Village neighborhood. Co-Founder Pamela Elizabeth, a vegan for over 20 years, wanted to create a restaurant serving delicious vegan food for all. 

Most people in the world love the flavor of cheese and vegans are no exception, but theirs of course, is dairy and cow free. Mac n’ Cheese is a crowd pleaser side dish, particularly at a Thanksgiving table. Vegans can also enjoy the wonderful flavor and texture of the cheesy pasta classic simply making some substitutions.

Urban Vegan Kitchen’s variation is made with: cashew cheese sauce, numu mozzarella, elbow macaroni, smoked paprika, herbed bread crumb topping and shiitake bacon. Cooked in a cast iron skillet, this comfort food dish is so tasty it doesn’t have to Mooo. So, how wonderful is going to be your feast this year? Cheesy.
